All baby greens and baby veggies in general are young plants enjoyed for their juicy, flavorful texture. Whenever I find myself talking or writing about growing green leafy vegetables, it’s hard for me to discuss the topic without mentioning numerous or at least main advantages of having these micro doctors in a garden. This time I chose to share with you some unexpected benefits of growing baby endive!  


Baby Endive is Low in Fat and Sugars

Two endive varieties I can vouch for are Garden Endive Grosse Pancalieri and Chicory Endive Nuance. Baby endive, like all lettuce, is rich in vitamins and minerals, while being naturally low in energy and calories.        

2. Delicious Taste and Flavor

Honestly, I am fond of baby endive for its delicate sharpness which gives balance to sweeter greens in salads. For my taste, baby endive is precisely as bitter as it should be. You never tried it? Now is your chance!

3. How to Prepare Baby Endive

In case you’re up for a salad, then I suggest to you to drizzle some raw baby endive leaves with savory vinaigrettes. Another option I like is to cook the leaves, steam them briefly and repeat the drizzle step, only this time I use olive oil and lemon juice.
